Zucchini Waffles With Tuna Cream Cheese

How It's done:


2 cups zucchini, grated
1 small onion, finely chopped
1/2 cup grated parmesan cheese
1/2 cup mozzarella cheese
2 egg

Tuna Cream Cheese

425g can tuna in spring water, drained
Juice of 1 lemon
Small tub cream cheese
1/2 red onion, finely diced
Black pepper to taste


Before adding zucchini to a medium mixing bowl, press between paper towels to remove moisture. Then add to the bowl along with eggs and cheese and mix well to combine. Add a large spoonful to heated waffle iron and cook through. Remove and place on a cooling rack. Waffles will crispen up as they cool. In a separate bowl, add the tuna, cream cheese mix, red onion and lemon juice and stir to combine. Add black pepper to taste and layer on top of waffles to serve.
