Zucchini Noodle Buddha Bowl

How It's done:

Bowl

Small handful baby spinach
1/2 Avocado
1/2 cup edamame beans
1 Large zucchini
Microgreens
Sesame seeds

Noodles

Peel the zucchini and pass through a noodle maker or create shreds using a veggie peeler. You can eat the zucchini noodles raw or cook in salted boiling water for 1 minute, and drain thoroughly before serving.

Dressing

1/2 cup EVOO
2 tablespoons white wine vinegar
1/2 lemon, juiced
1/2 cup fresh mixed herbs (basil, chives, parsley)
1 clove of garlic, peeled and minced
2 tablespoons honey or rice malt syrup
3 tablespoons plain greek yogurt
Salt and pepper to taste

Add all ingredients to a blender and blitz until smooth.

Instructions

Assemble all ingredients in a large bowl and drizzle with dressing to serve.
