Very Nutty Banana Loaf

How It's done:

Ingredients

2 ripe bananas, peeled and mashed
2 eggs
3 tbsp coconut oil, melted
1/4 cup plain greek or coconut yogurt
1 tsp vanilla extract
1/2 cup maple or rice malt syrup
1 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp salt
1 1/2 cups oat flour
1/2 cup macadamia nuts, crushed (plus extra for topping)
1 tbsp brown sugar for topping

Instructions

Preheat the oven to 180°c. In a large bowl, add bananas, eggs, and whisk. Add melted coconut oil (make sure it's not too hot so it doesn't cook the eggs), vanilla, yogurt, maple or rice malt syrup, and stir to combine. Add oat flour, salt, cinnamon, and baking soda, and mix well. Finally, add macadamia nuts and mix. Brush a loaf tin with coconut oil and pour in batter. Add extra nuts on top and sprinkle with brown sugar before baking for 45-55 minutes, or until cooked through in the centre.
