Very Berry Muffins

How It's done:


2 cups frozen berries, defrosted and peeled
1/2 cup unsweetened applesauce
1/2 very ripe banana, mashed
1/2 cup brown rice malt syrup (or honey)
1/2 cup almond or coconut milk
2 cups wholemeal flour
1 teaspoon baking powder
1 teaspoon vanilla essence
1/4 teaspoon sea salt


Preheat the oven to 180 degrees Celsius. Combine banana and applesauce in a food processor, ensuring no lumps remain. Add all remaining ingredients except for the berries and mix for approximately 30 seconds or until a silky batter is formed. Transfer the mixture to a bowl before adding the berries and gently stir to combine. Pour mixture into individually lined muffin tins and bake for 30 to 35 minutes or until golden brown and cooked through.
