Superfood Granola

How It's done:


1 cup gluten-free oats
1/4 cup pumpkin seeds
1/2 cup almond flakes
1/2 cup goji berries
1/2 cup shredded coconut
2 tablespoons organic coconut oil
1 tablespoon rice malt syrup or organic honey
3 teaspoons organic vanilla extract, add more if desired
1/2 teaspoon cinnamon powder
1/4 cup dried apricots, chopped ¼
1/4 cup organic sultanas or raisons
1/4 cup dried cranberries


Melt coconut oil on the stovetop and stir through oats, pumpkin seeds, almonds, rice malt syrup and vanilla extract. Spread mixture on a baking tray and bake in the oven at 180 degrees C for 15 to 20 minutes, stirring occasionally to avoid burning. Once the mixture has cooled, stir through dried fruit, goji berries, shredded coconut and cinnamon and store in an airtight container for up to 2 weeks.
