Summer Squash Frittata

How It's done:

Ingredients

2 eggs
1 squash, sliced
1 Cup baby spinach, shredded
1 1/2 tbsp parmesan cheese, grated
1/2 tsp coconut oil for frying
2 tbsp chopped onion
Goat cheese and arugula for dressing
Salt & pepper to taste

Instructions

In a large bowl, whisk eggs then add cheese, onion, squash and baby spinach leaves, shredded. In a medium frying pan, melt coconut oil and gently pour in the omelette mix. Cook for 2-3 mins per side or until firm. Top with goat cheese and arugula to serve.
