Smoked Salmon With Garlic Spinach

How It's done:


Rye bread, lightly toasted
Smoked salmon
Garlic spinach (recipe below)

Garlic Spinach

4 tsp olive oil
4 garlic cloves, peeled and smashed
500g fresh baby spinach
Salt and pepper to taste

Juice of half a lemon to serve


Heat the oil in a large frying pan before adding garlic and sautéing for approx 2 minutes ( or until the garlic is fragrant and golden brown). Add the spinach and mix to coat with the oil. Reduce the heat and stir for approx 1-2 minutes or until the spinach is wilted. Remove from heat and season with salt and pepper to serve. Add smokes salmon and spinach mix to rye bread and drizzle with lemon juice to serve.
