Shiitake & Feta Omelette

How It's done:


50g shiitake mushrooms
1 Small onion, peeled and sliced
4 large eggs, lightly beaten
1 Tbsp butter or coconut oil
2/3 cup feta cheese
1/4 tsp salt
1/4 tsp ground black pepper


In a hot pan, melt half of the butter/oil and add mushrooms and onion, stirring constantly. When tender, transfer to a bowl and mix through feta cheese. In the same pan, melt the remaining butter/oil and add eggs with salt and pepper. As the omelette starts to cook, spoon the mushroom mix onto the omelette, folding it in half to finish cooking. Transfer to serving plate with extra feta if desired.
