Paleo Coconut Pancakes

How It's done:


3 free-range eggs
2 tbsp coconut flour
1 tbsp coconut oil, melted
Pinch sea or rock salt
Coconut yoghurt to serve
Fresh berries to serve
Extra coconut oil for frying


In a large bowl, combine eggs, flour, coconut oil and salt and whisk to a smooth consistency. Heat pan on the stove top and place a small amount of coconut oil in pan. Pour half the batter into the pan and swirl the pan to ensure the pancake mix reaches the edge. Allow to cook for approx. 1 to 2 mins, flip and cook through. Repeat the process until all batter is used. Serve with coconut yoghurt and fresh berries.
