Honey Granola

How It's done:


1 cup GF oats
1/4 sunflower seeds
1/4 cup pumpkin seeds
1/4 cup cacao nibs
1/2 cup almonds
1/2 cup walnuts
1/2 cup goji berries
1/2 cup sulphur-free sultanas or currents
1/2 cup shredded coconut
2 tbsp coconut oil
1 tbsp honey (add more if desired)
3 tsp vanilla extract (add more if desired)
1/2 tsp cinnamon powder
Dried fruit of your choice


Melt coconut oil on the stovetop and stir through oats, sunflower seeds, pumpkin seeds, almonds, walnuts, honey and vanilla extract. Spread mix on a baking tray and bake in the oven at 180 degrees for 15 to 20 mins, stirring occasionally to avoid burning. Once the mix has cooled, stir through dried fruit, goji berries, shredded coconut, cinnamon and cacao nibs and store in an airtight container for up to two weeks.
