Healthy Breakfast Waffles

How It's done:


1 1/2 cups wholemeal or oat flour
2 teaspoons baking powder
3/4 cup coconut or nut milk
1/4 cup coconut oil, melted
2 tablespoons rice malt or maple syrup
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon salt


In a large bowl, mix all dry ingredients together. In a separate bowl, mix all the wet ingredients. Once this is done, whisk the wet and dry ingredients together and stir until combined (don't worry if you still see a few lumps. They will settle). Set the batter aside and rest for 10 minutes. Preheat the waffle iron, add the batter and close the lid. Once the waffle is golden and crisp, repeat the process (avoid stacking the hot waffles on top of each other, or they'll go soggy). Top with maple syrup or honey to serve.
