Feta & Dill Zucchini Fritters

How It's done:


2 medium zucchinis, washed and grated
2 large eggs
1 medium garlic clove, peeled and finely chopped
2 spring onions, finely chopped
2 tablespoons fresh dill, chopped
1/2 cup feta cheese, crumbled
1/2 whole lemon
1/4 cup flour
1/2 teaspoon baking powder
3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon ground black pepper


Place grated zucchini in a bowl. Toss with the salt and allow to sit for 10 minutes. Wring as much liquid out of the zucchini as possible and set it aside. Beat the eggs in a separate bowl. Add in the zucchini, spring onion, feta, dill, garlic and black pepper. Add the flour and baking powder and stir until combined. On the stovetop, heat olive oil in a large non-stick pan and drop spoonfuls of the fritter mix into the pan, using the back of the spoon to flatten. Cook until golden brown on both sides. Place cooked fritters on a paper towel to drain and drizzle with fresh lemon juice before serving.
