Easy Breakfast Rice Pudding

How It's done:


1 cup long-grain brown rice
4 cups (3 cups + 1 extra cup) unsweetened almond or coconut milk
1 tsp cinnamon
1 tsp vanilla
3 tablespoons maple or rice malt syrup
Pinch of salt


In a saucepan, add brown rice, 3 cups of nut milk, cinnamon, vanilla, maple or brown rice syrup and salt and slowly bring to boil. Reduce heat and cover the pot with a lid and allow to gently simmer for 45 minutes. Stirring occasionally. Add the final cup of nut milk and allow to simmer for a final 15-20 minutes or until the rice has a soft, chewy texture. Add a sprinkle of cinnamon, fruit, cookie crumbs and/or extra nut milk to serve.
