Cinnamon & Cacao Granola

How It's done:


4 cups oats
1 cup almond flakes
1/4 cup chia seeds
1/2 cup coconut oil, melted
2/3 cup coconut flakes
3/4 tsp sea salt
1/3 cup maple or brown rice malt syrup
2 tsp ground cinnamon
1/4 cup cacao nibs (or sugar-free choc buds, chopped)
2 tsp vanilla extract


Preheat the oven to 175 degrees Celsius. In a large mixing bowl, combine all dry ingredients except coconut and cacao/chocolate. In a smaller bowl, mix together all wet ingredients. Add the wet and dry ingredients together (except coconut and cacao/chocolate) and stir to thoroughly combine. Spread the mixture onto a baking tray lined with baking paper and bake for 20 minutes (stir once at the 10 min mark). Remove from the oven and add the coconut before baking for a further 5 minutes. Remove from the oven and stir through the cacao/chocolate. Allow the granola to cool to room temperature before storing it in an airtight container for up to 3 weeks.
