Cherry Tomato Bruschetta

How It's done:

Ingredients

500g cherry tomatoes
2-3 fresh garlic cloves, peeled and crushed
2 tbsp olive oil
2 tbsp balsamic vinegar
1 tbsp dried oregano leaves
Sea salt and pepper to taste
4 slices of crusty bread
4 slices of bocconcini cheese

Instructions

Preheat the oven to 190 degrees Celsius. Combine all ingredients except the oregano and cheese in a medium baking tray and cook for 20 to 30 mins or until tomatoes are tender. Remove from oven and stir through oregano. Lightly grill bread, top with warm tomatoes and bocconcini cheese to serve.
