Blueberry Chia Pudding

How It's done:


¼ cup chia seeds
1 cup coconut milk
1 vanilla bean (seeds only)
½ cup frozen berries, defrosted
1 tbsp rice malt syrup
1 tbsp shredded coconut
1 tbsp goji berries


In a small bowl, crush berries with a fork and add coconut, milk, chia, vanilla, goji berries and rice malt syrup to a larger bowl and whisk until combined. Top with shredded coconut, cover and place in the fridge overnight to set. Will keep for up to two days.
