Berries & Cream Cheese Pastry Puffs


How It's done:


1 sheet puff pastry, defrosted
250g fresh strawberries, washed and cut into slices
100g cream cheese, room temperature
3 tablespoons sugar
1 teaspoon vanilla extract
1 small egg, beaten for brushing (optional)
Honey and almond flakes for serving


Preheat the oven to 200 degrees celsius and line a baking tray with non-stick paper. In a small bowl, beat the cream cheese, sugar and vanilla and mix until well combined. Cut the sheet of puff pastry into 6 to 8 rectangles, pricking the centres with a fork. Brush the edges with a beaten egg if desired. Spread the cream cheese mixture into the centre of each rectangle and place the strawberries on top before baking for 15-20 minutes until the pastry is golden brown. Allow to cool on a wire rack and top with honey and almond flakes to serve.
