Banana Oat Pikelets

How It's done:
Ingredients
1 egg
1/2 cup flour (your choice of plain or wholemeal)
1/2 cup rolled oats
1/2 cup milk
1 banana, mashed
1 tsp baking powder
1 tsp coconut oil
Pinch of cinnamon
Instructions
In a medium-sized bowl, whisk the egg and slowly add dry ingredients to avoid clumping. Add milk, mashed banana and mix (add a dash more milk if the mix is too thick). On the stove, heat coconut oil in a pan. When the pan is hot, drop small amounts of the batter into the pan spaced well apart. Cook until small bubbles rise to the surface, flip and cook the other side. Serve with coconut yoghurt and fresh fruit.
