Apple Pie Chia Pudding

How It's done:
Chia Pudding
5 tbsp chia seeds
1/3 cup apple sauce
1 cup coconut milk (you can also use 1/2 cup coconut milk and 1/2 cup skim milk)
1 tbsp maple syrup or rice malt syrup (optional)
1 tsp vanilla extract
Sautéed Apples
2 red apples, peeled and diced
2 tbsp maple syrup or rice malt syrup
1 tbsp coconut oil
1/2 tsp cinnamon
Instructions
In a medium-sized bowl, whisk all chia pudding ingredients together and place in the fridge for an hour (you can also make it the night before and leave it overnight) On the stovetop, heat coconut oil, adding the apples, maple or rice malt syrup and cinnamon and stir to combine. Cook for approx. 2 minutes before reducing the heat and allowing to cook for a further 5 minutes, or until apples are soft (don't stop stirring or it will stick). Remove from heat and allow to cool. Layer the chia pudding and apples to serve.
