Apple Oat & Berry Muffins

How It's done:


1cup rolled oats (not instant)
1 cup coconut flour
1cup low-fat coconut milk
2 tbsp natural honey
1/2 cup unsweetened applesauce
1 egg
1 tsp cinnamon
1/2 cup sultanas or walnuts
1/2 tsp baking soda
1/4 tsp salt


Soak the oats in milk for about one hour (optional). Preheat the oven to 200 degrees. Combine all ingredients until combined. Add nuts or raisins if desired. Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan. Bake for 20-25 minutes or until done. Remove from pan, cool and enjoy. These can be frozen and reheated in the microwave for a quick breakfast.
The mixture will make up to 12 muffins.
