White Choc Granola Cookies

How It's done:

Ingredients

1 1/2 cups rolled oats
1/4 cup almond flour
1 cup coconut flakes
3 ripe bananas, peeled and mashed
1/4 cup EVOO
1/2 cup almonds, roughly chopped
1 cup dried apricots, chopped
1/2 cup yoghurt drops or white choc drops
1/2 teaspoon salt
1 teaspoon cinnamon

Instructions

Preheat the oven to 180 degrees Celcius and line an oven tray with baking paper. In a large bowl, combine oats, flour, almonds, coconut flakes, apricots, choc or yoghurt drops, salt, and cinnamon. In a smaller bowl, combine bananas and olive oil. Add the banana mix to the dry ingredients and stir to combine. Use a spoon to scoop dollops of the batter onto the tray to make approx 15 to 30 cookies (dependant upon the desired size). Bake for 20-25 minutes until golden brown on the base. Place cookies on a cooling rack and serve immediately.
