Sugar Free Sultana Muffins

How It's done:


2 1/3 cup plain flour
1 cup wholemeal plain flour
2 tsp baking powder
1 cup carrot, grated
1 cup zucchini, grated
1/2 cup sultanas
3/4 cup coconut, nut or regular milk
300g plain greek yoghurt
2 eggs
1 tsp cinnamon, plus extra for topping


Preheat the oven to 200 degrees Celsius. Spray an 18-hole muffin tin with non-stick spray or line with patty pans. In a large bowl, combine flours, cinnamon and baking powder. Add sultanas, zucchini and carrot and stir through. In a separate bowl, whisk yoghurt, milk and eggs before adding to the dry ingredients. Spoon mixture into the muffin tray, sprinkle with additional cinnamon and bake for 25-30 minutes or until cooked through.
