Raw Bounty Bites

How It's done:

Coconut Filling Ingredients

2 1/2 cups shredded coconut
1 cup coconut milk
1/4 cup coconut oil, melted
2 tablespoons rice malt syrup (or organic honey)
2 tablespoons coconut nectar (or substitute with 2 more tbsp rice malt syrup or honey)
1/4 teaspoon sea salt

Chocolate Coating Ingredients

1/4 cup coconut oil, melted
1/4 cup rice malt syrup (or honey)
1/4 cup cacao powder

Coconut Filling Instructions

In a medium-sized saucepan, gently combine coconut milk, coconut oil, honey/rice malt syrup/coconut nectar and sea salt. Once combined, stir through the shredded coconut. You can either roll this mixture into balls or pour the mixture into a lined baking dish, press down firmly with your hands (this is a great job for the kids) and place it in the freezer for approximately 30 to 60 minutes to set. Once set, remove the coconut mixture from the freezer, cut it into bite-sized pieces and return to the freezer while you make your chocolate coating.

Chocolate Coating Instructions

Use a small non-stick saucepan or double boiler and melt all the chocolate coating ingredients over low heat. Once combined, take the coconut bites from the freezer and carefully dip each one in the chocolate coating. Place on a wire rack to "drip" or just place them directly onto a lined tray and return to the freezer to set (approximately 20 minutes). Keep remaining bounty bites in the freezer until ready to serve.
