Peanut Butter Gf Cookies

How It's done:

Ingredients

3 tablespoons coconut oil, melted and cooled
1/2 cup peanut butter
1 cup GF rolled oats
1 egg
1 teaspoon vanilla extract
1/2 cup coconut sugar or stevia
1/2 teaspoon baking soda
Pinch of salt (optional if your peanut butter is salted)

Instructions

Preheat the oven to 175 degrees Celsius. In a mixing bowl, combine peanut butter, coconut oil and sugar until well combined. Add egg and vanilla and mix. Add the remaining ingredients (baking soda, oats, salt) and mix well. Cover and refrigerate the mixture for 30 mins before using a spoon to make balls and place them on a lined baking tray. Bake for approx 10 mins or until cookies are just set on top. Remove from the oven and allow cookies to cool on the baking tray for a further 5 mins before placing them on a wire cooling rack. Store in an airtight container for up to 10 days.
