Paleo Lemon & Chia Muffins

How It's done:


1 cup almond flour
1 teaspoon baking powder
2 tablespoons coconut flour
1/4 cup coconut oil, melted
3 tablespoons organic honey or brown rice syrup
3 eggs
2 teaspoons lemon zest
2 tablespoons coconut or greek yoghurt
2 tablespoons lemon juice
2 tablespoon almond or coconut milk
1 Tablespoon chia seeds
Pinch of rock salt


Preheat the oven to 190 degrees Celsius. In a large bowl, mix all wet ingredients. Once combined, add dry ingredients but don't over-mix or the batter will become "rubbery". If the chia seeds soak up too much moisture, just another tablespoon of almond or coconut milk to create a smooth consistency. Spoon mix into muffin tins and bake for approximately 15 minutes or until a toothpick comes out clean from the centre of the muffin. Allow muffins to cool for 3 to 5 minutes in the muffin tray before turning them onto a wire rack. Top with coconut yoghurt and fresh raspberries to serve.
