Lemon Poppyseed Cookies

How It's done:


2 ripe bananas, mashed
2 cups instant oats
2 teaspoons vanilla extract
1 teaspoon cinnamon
1/2 cup sultanas
1/2 cup unsweetened applesauce
1/4 cup desiccated coconut
14 cup honey


Mash bananas in a bowl, then add applesauce, vanilla, cinnamon and honey. Stir to combine. Add the oats, coconut and sultanas, allowing the mixture to sit for 5 minutes if necessary to allow the oats to absorb the liquid ingredients. Drop spoonfuls of mixture onto a lightly greased oven tray and bake for 20 minutes at 180 degrees celsius, or until golden brown.
