Guilt Free Chocolate Brownies

How It's done:

Ingredients

2 avocados, very ripe
1 cup brown rice syrup
1/2 cup organic dark chocolate (70% or more), chopped
1/2 cup cacao powder
1/2 cup almond flour
3 eggs
1 tbsp flax seeds
3 tbsp almond milk
2 tsp pure vanilla extract
1/2 tsp sea or rock salt
1 tsp baking powder
1/4 tsp granulated instant coffee

Instructions

Preheat the oven to 180 degrees Celsius. Using an electric mixer, whip the eggs, almond milk, flax, and brown rice syrup until combined. In a separate bowl, melt the dark chocolate using a double boiler and stirring continuously. Once the chocolate has melted, allow to cool slightly and add the melted chocolate and cacao to the whipped egg/milk/flax/syrup mix and mix on low a low setting until combined. Using a spatula, gently fold through the almond meal, baking powder, coffee, vanilla extract and salt. Blend avocado until very smooth using a food processor and fold avocado into the batter. Pour mixture into a 20 x 20 cm lined baking tin and bake for 30 to 35 minutes or until a toothpick comes out clean.
