Golden Apricot Bliss Balls

How It's done:

Ingredients

1 cup soft dried apricots
2/3 cup desiccated coconut
3 extra tbsp desiccated coconut, for coating
1/2 cup almond meal
1 tbsp chia seeds
2 tbsp maple or brown rice malt syrup
1 tsp vanilla extract
2 tbsp water

Instructions

Add dried apricots to your food processor and finely chop. Add coconut, chia, maple or brown rice malt syrup, almond meal, vanilla, and water and blend until combined. Roll the mixture into balls (if it needs a little more water, add and blend until moist) and roll the balls in the coconut. Place balls in the fridge for 1hr before eating. Store in the fridge in an airtight container for up to 5 days.
