Easy Peach Galette

How It's done:


680g peaches, washed and quartered
1 sheet of shortcrust pastry (you can also use puff pastry)
1/4 cup apricot jam
2 tbsp sugar


Preheat the oven to 190 degrees Celsius. Roll out pastry crust and place in a pie baking dish or on a lined baking tray. Cover the pastry with apricot jam and arrange the peaches on top, leaving the edges free to fold. Sprinkle sugar over the peaches and fold the edges of the crust over the edge of the outer peaches. Bake for 45-50 minutes or until the crust is lightly browned and the fruit is bubbling. Remove from the oven and allow to cool for 20 minutes before serving.
