Carrot & Coriander Bean Dip

How It's done:


3 carrots, peeled
1/2 cup cannellini beans
1 small clove of garlic, peeled
Small handful of fresh coriander leaves
1/4 tsp dried coriander
1/4 tsp cumin
Juice of half a lemon
1 tbsp olive oil
1/4 tsp salt
Handful raw or roasted cashews
1/4 tsp pepper
1/4 tsp honey
Smoked paprika to serve


Blend all ingredients in a food processor and add smoked paprika to serve.
