Banana Walnut Oatmeal Muffins

How It's done:


2 large ripe bananas, peeled and mashed
2 cups rolled oats
1/2 cup oat flour
2 large eggs
1 cup almond milk
1 cup walnuts
1 tsp baking powder
1 tsp vanilla extract
1 tsp ground cinnamon
1/4 cup maple or brown rice syrup
1/4 tsp salt


Preheat the oven to 180 degrees Celsius. Line a muffin tin with non-stick spray or silicone muffin cups. Combine all the wet ingredients in a large bowl before slowly adding the dry ingredients, stirring well to combine. Pour the batter into the muffin tray adding extra oats on top if desired. Bake for 20-25 mins or until the muffins are cooked through. Remove the tray from the oven and allow it to cool before removing the muffins from the tin. Serve with cream cheese, yoghurt or jam.
