Lemon Curd


How It's done:


3 eggs, yolks only
1/4 cup honey or rice malt syrup
1/2 cup lemon juice
1 tablespoon lemon zest
60 grams butter, cut into small chunks


In a small bowl, whisk honey/rice malt syrup and egg yolks before adding lemon juice and zest. Transfer to a small saucepan and cook over low heat until the mixture begins to thicken. Continue to stir until the mixture has reduced by approx. half. Add the butter and continue to stir/whisk until fully combined. Allow mix to cool before serving.
