Zucchini Puff Pastry Tart

How It's done:

Ingredients

1 sheet of puff pastry, defrosted
2 yellow zucchinis, thinly sliced
1/2 cup ricotta cheese
2 cloves garlic, thinly sliced
1/2 cup grated parmesan
1/2 tsp fresh thyme leaves
A pinch of red chilli flakes
1 egg + 2 tablespoons milk, for egg wash
Salt and freshly cracked black pepper to taste

Instructions

Preheat the oven to 200 degrees celsius. Place puff pastry on a baking tray lined with non-stick paper. Prick the middle of the pastry with a fork and then spread with ricotta cheese and chilli flakes. Top the ricotta with garlic, parmesan cheese, thyme leaves and zucchini slices. Fold the edges of the pastry inward and brush with the egg wash. Sprinkle with salt and pepper and bake for 30-40 minutes or until pastry is golden brown. Serve immediately.
