Sweet Potato Wedges With Tangy Mayonnaise

How It's done:

Ingredients

1 kg orange sweet potatoes, peeled and cut into wedges
1 tbsp coriander, washed and chopped
1 1/2 tsp ground cumin
2 1/2 tbsp olive oil
200g mayonnaise
60ml lime juice
1 tsp honey
Salt and pepper to taste

Instructions

Preheat the oven to 200 degrees Celsius. Add the olive oil to a large roasting tray and allow it to heat in the oven for 5 minutes. Add sweet potatoes to the roasting tray, season with sea salt and pepper and toss until all potatoes are thoroughly coated. Spread them out on the tray and bake for 30-35 minutes, turning twice. Meanwhile, add the mayonnaise, honey, lime juice, cumin and coriander to a food processor and blitz. When ready, remove the sweet potato wedges from the oven and drain on a paper towel before serving with the mayonnaise and extra coriander for garnish.
