Raw Veggie Pad Thai

How It's done:

Pad Thai Ingredients

1 zucchini, julienned
1 red capsicum, thinly sliced
1 yellow capsicum, thinly sliced
1 large carrot, julienned
3-4 spring onions, thinly sliced
1/2 cup parsley, torn
1/2 cup peas, fresh (you can use frozen, just cook them as per packet instructions)
Peanuts for serving
Lime wedges for serving

Sauce Ingredients

1/4 cup tahini
1/4 cup almond butter
1/4 cup water
1/2 lime, squeezed
3 tbsp maple syrup
1 tsp ginger, minced
3 tbsp tamari or coconut aminos
1 tsp garlic, minced
Pinch of salt


Combine the sauce ingredients in a small bowl, whisk and set aside. Place the salad vegetables on a serving platter and pour the sauce on top. Toss to coat and top with nuts, spring onion and drizzle with lime juice to serve.
