Mozzarella & Pesto Toast Toppers

How It's done:

Ingredients

Crusty bread
Cherry tomatoes, quartered
Mozzarella cheese, sliced
Pesto

Pesto Ingredients

1/4 cup pine nuts
1 1/2 cups fresh basil leaves
1-2 garlic cloves, peeled
3-5 tablespoons organic olive oil
1/3 cup finely grated organic parmesan cheese
Squeeze of lemon juice

Pesto Instructions

Place all ingredients, except olive oil, into food processor and pulse until mixed. Add olive oil and pulse again, scraping down the sides of the bowl as needed.


To Serve

Assemble all ingredients onto bread and place under the grill until the cheese melts. Top with fresh pesto to serve.
