Healthy Veggie Skewers

How It's done:
Ingredients
2 zucchini, sliced
1 red capsicum, cut into chunks
1/2 cauliflower, cut into bite-sized chunks
3 cups mushrooms, stem removed
2 tbsp balsamic vinegar
2 tbsp olive oil
2 tsp dijon mustard
1 tbsp lemon juice
2 garlic cloves, skin removed, and minced
Fresh herbs to taste
Salt and pepper
Instructions
Soak wooden skewers in water for 20-30 minutes. In a medium-sized bowl, mix balsamic vinegar, mustard, garlic, olive oil, lemon juice, fresh herbs, salt and pepper. Toss through the chopped vegetables and allow to sit for 10-20 minutes before threading the vegetables onto the skewers. Place skewers on the grill for 5-7 minutes, continuously turning to ensure all the vegetables are cooked through. Add mayonnaise, chilli sauce or pita wraps to serve.
