Green Falafel & Tahini Buddha Bowl

How It's done:

Buddha Bowl Ingredients

Green falafel (recipe below)
Quinoa
Butternut squash
Green tomatoes
Avocado
Beetroot
Beetroot hummus
Tahini sauce

Green Falafel Ingredients

420g can chickpeas, rinsed and drained
4 cups of baby spinach
1 1/2 tbsp tahini
3 large cloves garlic, peeled and chopped
1 1/2 tbsp fresh lemon juice
1/4 tsp cumin
3-4 tbsp oat flour
3 tbsp olive or coconut oil, for cooking
1/4 tsp salt and pepper

Instructions

Add all ingredients except the oat flour to a food processor and combine. Transfer the mix to a large bowl and add flour slowly until the mix is thick enough to roll into balls (you may want to add more seasonings at this stage e.g. salt, pepper, lemon juice) On the stove top, heat the olive oil in a large pan and cook each falafel ball until cooked through or until they form a golden brown colour on the outside. To complete your buddha bowl, place all ingredients in a large serving bowl and top with your favourite dressing to serve.
