Greek Style Spicy Beans

How It's done:


400 g can of cannellini beans
200ml filtered water
1 tbsp olive oil
1 clove of garlic, peeled and sliced
1 small white onion, peeled and sliced
3 tbsp tomato puree
1 red capsicum, seeded and sliced
1 tbsp red wine vinegar
1/2 tsp paprika
Pinch of cayenne pepper
1 cup baby spinach
Black pepper to taste


On the stovetop, heat olive oil in a pan and cook garlic, onion and red capsicum for 1-2 minutes. Add tomato puree, cayenne, and paprika and cook for 1 minute. Add beans, vinegar and water and simmer gently for 15 minutes to reduce the sauce. Add spinach and allow to wilt. Add black pepper and serve with crusty bread.
