Greek Chicken Souvlaki

How It's done:


1kg chicken breast, cut into cubes
10 garlic cloves, peeled
Juice of lemon
1/4 cup olive oil
1/4 cup dry white wine
1 tsp dried rosemary
1 tsp sweet paprika
2 tbsp dried oregano
2 bay leaves
1 tsp salt and black pepper


Add garlic, olive oil, lemon juice, white wine, paprika, oregano, rosemary and salt and pepper to a food processor and pulse to combine. Place chicken and bay leaves in a large bowl and top with marinade. Toss to combine, cover and refrigerate for 2-3 hours. Meanwhile, soak 10 to 12 wooden skewers in water for 45 minutes then thread the marinated chicken pieces through onto the skewers. Grill the chicken skewers over medium heat, continuing to brush with the marinade until the chicken is almost cooked through. Once the chicken is cooked, discard any unused marinade. Rest the chicken for 2-3 minutes before serving with tzatziki and grilled vegetables.
