Feta, Zucchini & Tomato Tart

How It's done:

Ingredients

1 sheet of puff pastry, defrosted
2 yellow zucchinis, thinly sliced
1 cup feta cheese
2 cloves garlic, thinly sliced
1/2 tsp fresh thyme leaves
1 large tomato, thinly sliced
1 egg + 2 tablespoons milk, for egg wash
Salt and freshly cracked black pepper, to taste

Instructions

Preheat the oven to 200 degrees Celsius. Place puff pastry on a baking tray lined with non-stick paper. Prick the middle of the pastry with a fork and then add feta, garlic, thyme leaves, tomato and zucchini slices. Fold the edges of the pastry inward and brush with the egg wash. Sprinkle with salt and pepper and bake for 30-40 minutes or until pastry is golden brown. Serve immediately.
