Easy One Pot Lentil Soup

How It's done:

Ingredients

1 tbsp coconut oil
2 onions, peeled and diced
4 cloves garlic, peeled and minced
4 stalks of celery, chopped
2 cups spinach, chopped
1 small potato, peeled and diced
2 carrots, sliced
2 cups vegetable broth
1 tbsp curry powder
1 tbsp turmeric
1 tsp cumin
1 cup red lentils
1 cup green lentils
1 can of coconut milk
2 cans of diced tomatoes
1 tbsp minced fresh ginger
1 tbsp fresh lemon juice
1/2 tsp salt (or more if desired)
1/2 tsp pepper

Instructions

Add all ingredients to a large saucepan, cover and cook for 1 hour on medium heat or until lentils and potatoes are cooked through. When cooked, remove 1 cup of the liquid and blend the veggies to the desired consistency before adding the liquid back to the pot and mixing in. Serve with crusty bread.
