Cheesy Autumn Veggie Pizza

How It's done:

Ingredients

1 store-bought pizza crust or flatbread
150g shredded mozzarella or fetta cheese
2 cups pumpkin, peeled and cut into very small chunks
1 medium red onion peeled and sliced
4 tablespoons pesto (optional, for serving)
2 tablespoon olive oil
Salt and pepper to taste

Instructions

Combine veggies and olive oil in a pan and cook through. Preheat the oven to 200 degrees celsius and add half the shredded cheese to the pizza crust before topping with the veggie mix. Add salt and pepper before adding the remainder of the cheese and place the pizza into the oven for approx 12-15 minutes or until the crust is golden brown and the cheese is melted. Remove from the oven and top with pesto to serve.
