How It's done:

Buddha Bowl Ingredients

Cauliflower rice (recipe below)
Kale, pan-fried with chilli and garlic
Avocado
Edamame beans
Tofu, pan-fried with chilli and garlic

Cauliflower Rice Ingredients

1 large head cauliflower, cut into small chunks
1 tbsp olive oil

Instructions

Add cauliflower to your food processor, and blitz using the grater attachment. Press moisture from the "rice" with a paper towel before adding rice to a large pan and frying with a tbsp of olive oil until the rice has reached your desired texture. Season with soy sauce or salt and pepper. To complete your buddha bowl, place all ingredients in a large bowl and top with your favourite dressing to serve.
