Asian Noodle Buddha Bowl

How It's done:
Buddha Bowl Ingredients
Udon noodles
Asian stock (recipe below)
Steamed tofu
Watermelon radish
Zucchini
Snow peas
Lime wedges
Mushrooms
Stock Ingredients
200g mushrooms, sliced
1 small onion, sliced
1 large zucchini, sliced
3 spring onions, sliced
1/4 cup basil, chopped
1/4 cup vegetable broth
3 tablespoons coconut aminos or soy sauce
2 teaspoons pure maple syrup
1/2 teaspoon garlic powder
1/2 teaspoon chilli flakes
1 tablespoon sesame oil
Stock Instructions
Add all ingredients to a pan (except broth and syrup) and cook until fragrant. Add remaining ingredients, cover and cook for 10 mins. Add to cooked noodles and chosen veg to serve.
