Smoked Salmon Rolls

How It's done:


2 red capsicums
1 red chilli, finely chopped, seeds removed
1 small tub of cream cheese
2 medium tins of smoked salmon, drained
3 zucchinis
1 tablespoon lemon juice
Rind of half a lemon
Small handful of fresh chives, chopped
Salt and pepper to taste


Finely chop and grill the capsicums until soft and allow to cool. Slice zucchini into thin strips, grilling each side for 1 minute or just until they have grill marks. Allow to cool. In a small bowl, combine cream cheese, chilli, lemon juice, rind, chives, and salt and pepper. Mix well and then gently fold in the capsicums and salmon. Lay zucchini strips on a plate and spread with cream cheese mix, then roll to serve.
