Roasted Eggplant Toast Toppers


How It's done:


2 large eggplants, sliced
1/4 feta, crumbled
1/2 cup olive oil
1 tsp dried oregano
1/4 tsp red pepper flakes
2 tbsp parsley, chopped
Juice of 1/2 lemon
Pinch of salt and ground black pepper
(extras for serving: crusty bread, feta, tomato, ham, mustard and parsley)


Combine oil, oregano, and pepper flakes in a small bowl and brush the oil mix over the eggplants. Season with salt and pepper and place the eggplant slices on a medium grill and cook until tender and the eggplant shows grill marks (2-3 mins per side). Layer the grilled eggplants on crusty toasted bread with feta, tomato, ham, mustard and parsley, adding a squeeze of lemon juice to serve.
