Protein Power Bruschetta

How It's done:
Ingredients
2 slices of dark rye bread, lightly toasted
1 small bunch of spring onions or chives
1 handful of baby spinach, roughly chopped
1 garlic clove, peeled and cut in half
2 hard-boiled eggs, peeled and quartered
1/3 cup mixed beans, cooked, rinsed and drained
Sour cream for drizzling
Sea or rock salt and pepper to taste
Instructions
Lightly toast the bread and place it on a plate. use one-half of the garlic clove to rub over the bread, then arrange your topping, placing the egg on top last. Drizzle with sour cream and sprinkle with salt and pepper to serve.
