Pea Pesto Bruschetta

How It's done:


300 grams of organic frozen peas, defrosted
1 small garlic clove, skin removed
1 tablespoon lemon juice
1/4 cup grated organic parmesan cheese (or more to taste)
1/3 cup organic olive oil
Wholegrain bread, gluten-free
Salt and pepper to taste


Pulse peas, garlic, parmesan cheese, lemon juice and salt and pepper in a food processor. Slowly add olive oil until well combined. This should only take a minute or two. Toast or grill bread and brush with extra olive oil if desired. Top with pea pesto to serve.
