Honey Roasted Pumpkin

How It's done:


1kg pumpkin, peeled and thinly sliced
2 tbsp honey
2 tbsp coconut oil, melted
2 tbsp dried or fresh thyme
Sea or rock salt to taste


Preheat the oven to 220 degrees Celsius. In a small bowl, whisk honey, coconut oil and thyme and set aside. Arrange pumpkin slices in a large roasting tray and toss through the honey glaze mix. Season to taste with salt and roast for 20-25 mins or until pumpkin is cooked through.
